做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一个半(bàn )小(xiǎo )时(shí ),下盐调味即可品尝。 -
