做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。 -
