做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。 -
