做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏米(mǐ )。用清(qīng )水把陈(chén )皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他(tā )材(cái )料(liào ),武火煮沸,转中小火煲一(yī )个(gè )半(bàn )小时,下盐调味即可品(pǐn )尝。 -
