做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热(rè )锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下(xià )盐调味即可(kě )品尝。 -
