做法:春(chūn )笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开(kāi )后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。 -
